Trolley Dash: Herby salmon fishcakes with rocket

Pop these key ingredients into your trolley in-store and then follow this simple recipe at home to make these light salmon fishcakes.

  • 2 Tesco Roast Salmon Fillets Sweet Chilli
  • 2 Tesco Irish White Potatoes
  • Tesco Babyleaf Rocket Salad
  • 1 Tesco Free Range Egg Large


Remove the salmon fillets from the packaging and place on a lightly oiled baking tray.

Cover loosely with foil, place in the centre of a pre-heated oven. Bake for 20 minutes at Gas mark 4 / Fan 160C.

Pierce 2 large potatoes with a fork and microwave for 8-10 minutes or until softened. Scoop out the flesh and leave to cool.

Flake the cooked salmon fillets into a large bowl and mix with the potato and an egg until combined. Season and then mould into the fishcake shape.

Fry in oil for 3-4 minutes on each side, until piping hot and golden. Serve with wild rocket leaves.
