Our quick and easy take on the classic Russian beef stroganoff dish is the perfect addition to your easy recipe arsenal! Beef stroganoff recipes come in many different variations, some of which take more time to prep and cook. We've prepared this recipe specially for anyone who needs a quick and delicious recipe fix which is sure to impress.


Typically, modern beef stroganoff is made using tender cuts of beef to speed up the cooking time, however you can use any kind of cut you prefer. The traditional beef stroganoff dish is made using beef chunks as opposed to strips so if you decide to use beef round, simply dice the meat into chunks or cubes for a truly traditional take.


This beef stroganoff recipe will go down well at dinner parties and will make a fine addition to your family's recipe book. Nobody needs to know it only took you 25 minutes to cook!

Servings: 4 people


  • 3tbsp olive oil
  • 600g beef, rump steak, strips or finest* Irish Angus Round Steak
  • 1 large onion, sliced
  • 2 garlic cloves, crushed
  • 400g mushrooms, sliced
  • 2tsp chopped fresh thyme leaves
  • 2tbsp tomato puree
  • 2tbsp dijon mustard
  • 2tbsp parsley, chopped


1. Heat a large, heavy-based saucepan over high heat.

2. Season meat with salt and freshly ground black pepper.

3. Add the oil and a handful of beef strips to the pan, and brown all over, remove to a side plate. Repeat in batches until all beef has been browned.

4. Add more oil and add the onion and garlic and cook for 2-3 minutes until onion is soft. 

5 Add the mushrooms, thyme and salt and pepper, and stir to combine and cook for 3 mins. 

6. Return the browned beef strips to the pan along with the tomato puree and dijon mustard and cook for a further 3 mins on a medium heat. 

7. Remove from heat and fold in sour cream and parsley.  Serve with wide ribbon pasta (fettuccine, tagliatelle pappardelle), mash, rice or chunky homemade chips.


*Top tip: for added deliciousness and creamy flavour, add a knob of butter over your ribbon pasta of choice.
