Simple sausage casserole

Comforting and nutritious, this hearty meal is delicious reheated the next day, that’s if you have any leftovers!

Servings: 4 people


  • A drizzle of olive oil
  • 1 onion, finely sliced
  • 8 reduced fat sausages
  • 3 garlic cloves, finely chopped
  • 500ml pork or beef stock
  • Few sprigs thyme
  • 400g chopped tomatoes
  • 565g Tesco carrots And swedes


Heat the oil in a wide saucepan and fry the onion and sausages over a medium heat for about 5 minutes, stirring until the onions are soft and the sausages are browned all over.

Add the garlic, cook briefly, then add the vegetables (we've suggested carrots and swedes which you can boil fresh or buy frozen, but any casserole veg will do) tomatoes, stock and thyme and bring to the boil. Simmer over a gentle heat for 20-25 minutes until the sausages are cooked through.

Season with black pepper and serve with mashed potato or pasta.

Freezing and defrosting guidelines 

Once the dish has cooled completely, transfer it to an airtight, freezer-safe container, seal and freeze for up to 1-3 months. To serve, defrost thoroughly in the fridge overnight before reheating. Loosely cover with foil and bake until dish is thoroughly heated through. Reheat until piping hot.
