Rib Eye And Jumbo Prawns

Preparation

1. Fry the rib eye steaks in a hot pan for 2minutes on both sides, set aside to rest

2. Add the prawns to the pan and cook on high heat for 2mins until cooked, place on top of the steaks

3. In a clean pot, add the butter and cook over medium heat until brown, add the shallots, tomatoes, vinegar and chutney. Bring to boil and set aside

4. Dress the rocket and fry the 4 eggs

5. Place the rib eyes on plates, cover with the prawns and fried egg.

6. Finish by spooning over the sauce and adding a handful of dressed rocket.
