Preparation

1. Cook the spaghetti in boiling water for approx. 8mins

2.  In a large saucepan, add the pancetta, onion and garlic and cook gently in some olive oil until soft.

3. When the onions are soft, increase the heat and add the white wine and allow to reduce.

4. Next add the cream and reduce by half

5. Next, season the sauce with salt some cooking water and the grated parmesan.

6. Add the spaghetti to the sauce and mix thoroughly before serving in warm bowls
