Lamb with rosemary pesto recipe

Liven up your lamb with this pesto and rosemary glaze. This no-fuss recipe couldn't be easier to follow and can be left alone to cook while you spend time with your family this Easter.

Servings: 8 people


  • 3 handfuls of parsley, rosemary and mint combination to your taste
  • 1 handful pine nuts
  • 1 handful freshly grated Parmesan
  • Half clove of garlic
  • Olive oil to bind
  • Salt and pepper to taste
  • Tesco Irish Whole Leg of Lamb


To make the pesto put all the herbs, nuts, cheese, garlic and salt and pepper in a food processor and whizz.

Put the lamb on a baking tray and coat the outside with some olive oil.

With a spoon, spread the pesto mixture onto the oiled surface of the lamb until you have coated it to your liking. 

Preheat the oven to 180°C/ Gas 4.

To cook the lamb medium, time for 25min per 500g and then additional 25 minutes after this.
