Grilled steak fajitas

Make a fiesta with leftover steak! Quick and easy, these steak fajitas are a tasty treat that will knock your family’s socks off.

Servings: 4 people


  • Leftover steak (use within two days)
  • 75g white or red cheddar
  • 100g soured cream
  • ½ tsp cayenne pepper
  • ½ tsp paprika
  • Sea salt and freshly ground black pepper
  • ½ juice of lime
  • 4 x flour tortillas
  • 1-2 tomatoes, or 1 red or green pepper, chopped roughly and in chunks
  • 1 red or white onion, finely chopped
  • Olive oil
  • Lettuce leaves


If your leftover steak isn’t sliced or cut, go ahead and chop it into bite-sized pieces.  Place the pieces in a bowl with 1 tablespoon of olive oil and marinate while you prepare your other ingredients. (Even if it’s been in the fridge for a day or so, the marinade will bring it right back to life.)

In a pan, add a little olive oil (about one tablespoon) and cook the onion until it’s translucent then add in the tomatoes or peppers and cook, stirring occasionally until they are slightly soft. Add the steak pieces to the pan and squeeze over the lime juice and any spices and seasoning.

Stir until the steak has warmed through sufficiently.

Preheat the oven to 180°C / 350°F / Gas mark 4. Wrap the tortillas in foil and place them on the rack to warm.

Remove the warmed tortillas from the foil and fill each one with the steak and vegetable mixture.

Serve with the side toppings and it’s fiesta time! Whether you’re aiming for an exotic lunch or a quick dinner, these steak fajitas will be an absolute party for your taste buds! If your kids aren’t a fan of fajitas, why not add some wedges as a tasty alternative.
