Gnocchi with blue cheese, bacon and spinach

  • 2 x 500g bags fresh gnocchi
  • 4 bacon rashers
  • 100g bag spinach leaves
  • 150g Cashel Blue Cream Cheese
  • 3-4tbsp milk


Boil a large pan of water, add the gnocchi and cook for 3 minutes (or per the packet's instructions).

Meanwhile, in another pan, fry the bacon until crispy.

Add the spinach, stir for 1 minute until wilted, then add the Cashel Blue Cream Cheese and the milk.

Stir until smooth.

Drain the gnocchi, toss with the sauce and other ingredients before serving.
