You can have your cake and eat it two ways and the kids can even help! Whether you want to go for a cake with a crispy biscuit base, or just make some quick chocolate slices, simply follow the recipe below.

Prep time: 15 minutes

Cook time: 15 minutes

Servings: 8 people

  • 200g milk chocolate (broken)
  • 100g dark chocolate (broken)
  • 100g butter
  • 50g dark brown sugar
  • 110g glacé cherries (chopped)
  • *For the base*
  • 125g finely ground digestive biscuit crumbs
  • 5 tbsp caster sugar
  • 85g butter, melted

For the base:

Preheat the oven to 190 C / Gas mark 5.

Mix biscuit crumbs, sugar and melted butter in a food processer. Press the mixture into the bottom of a pie dish and bake for 7 minutes.

Take the pie tray out of the oven and leave it to cool.

For the cake:

Place the broken chocolate, butter and sugar in a microwaveable dish and melt in the microwave, with the microwave on a medium setting. Stop and check the mixture once or twice to make sure it’s not burnt.

Once the mixture is liquid stir the cherries, apricots and nuts into the bowl.

Place this hot mixture on top of the base, still in the (now cooled) baking tray then leave in the fridge to set.
