Chicken and tomato pitta pockets

Fresh lettuce and cherry tomatoes combined with houmous makes a lovely creamy filling for these toasted pitta pockets.

  • 2 mini pitta breads
  • 1 generous tbsp Tesco Everyday Value Houmous Dip
  • 3 lettuce leaves, shredded
  • 25g ready cooked roast chicken breast, sliced
  • 2 vine cherry tomatoes, cut into quarters


Warm the pitta bread in the toaster and then slice off the tops. Use these tops to keep the pitta open before you put in your fillings.

Spoon some houmous into each pitta first, so that it doesn’t all fall out of the top when eating.

Stuff with shredded lettuce, sliced chicken and cherry tomatoes, or any other leftover veg you have in the fridge.
