Caitriona Redmond's Tomato & Beef Meatball Pasta

This is a real family favourite and it is so quick and easy to to put together any night of the week.

Cook time: 30 minutes

Servings: 4 people


  • 1 tablespoon olive oil
  • 1 onion, roughly chopped
  • 2 cloves of garlic, minced
  • 1 carton Tesco Tomato Passata
  • 1 pinch of sugar
  • 500g Tesco Penne Pasta
  • 349g Tesco Irish beef meatballs
  • 100g Tesco sweetcorn
  • Pinch of salt & pepper


Caitriona is back with another thrifty creation born from Tesco's Staying Down range! 

Cost: €1.30c per serving*.

First cook the meatballs according to the pack instructions.

While waiting for the meatballs to cook, put a large saucepan on a medium heat.

Pour in the olive oil, then add the onion and cook until it soften.

Add the minced garlic and stir well.

Pour in the passata, add a pinch of sugar, salt and pepper, then allow the sauce to come to a simmer.

Cover and leave simmering.

Once the meatballs have cooked, carefully spoon them into the sauce that is still bubbling.

Pour in the sweetcorn and stir.

Cook the pasta according to the instructions on the packet and serve the delicious meatball sauce.

This is one of my kids’ favourite dinners!
