Wholewheat Pasta with Tuna

Whether it's some main course inspiration you're searching for or a lunchbox you need filling, give this wholewheat pasta with tuna dish a try.  

Prep time: 5 minutes

Cook time: 12 minutes

Servings: 4 people


Cook the pasta according to pack instructions, then drain.

Meanwhile, add the oil to a pan and fry the tomatoes for 1-2 minutes, then stir in the remaining ingredients and pasta, heating until the rocket has wilted.  Serve immediately.

Serve with freshly grated hard Parmesan sprinkled on the top.

You can shake things up by swapping tuna for salmon.



350g wholewheat penne pasta

4tbsp cold pressed rapeseed oil

150g cherry tomatoes, halved

2 x 130g cans tuna in brine, drained

juice of 1 lemon

50g rocket

Hardboiled egg (optional)

Handful of boiled peas (optional)

Handful of tinned sweetcorn (optional)
