Strawberry Gummy Snacks

All the fun of gummy sweets, but completely guilt-free. This healthy take on fruity gummy snacks uses fresh strawberries and runny honey to give all the natural sweetness you need. Enjoy these as a satisfying afternoon snack.

Cook time: 15 minutes

Servings: 25 people


Tip the strawberries and 50ml water into a saucepan.

Cook over a gentle heat for 3–5 minutes, until the berries begin to burst, skimming away any froth that rises to the surface.

Then whiz in a food processor until a smooth sauce forms. Stir through the honey and a squeeze of lemon juice, to taste.

Pass through a thin sieve, discarding the seeds, then measure out 300ml of the strawberry juice.

Meanwhile place the gelatine in a bowl and pour over 5 tbsp cold water.

Leave until the liquid has been absorbed.

Place the bowl over a pan of boiling water.

Remove from the heat and leave for 5 minutes until the gelatine has dissolved.

Then stir into the strawberry juice and mix well.

Pour into a lightly oiled 20x20cm baking tin.

Place in the fridge for 3 hours or overnight until solid.

Turn out onto a board, then use a small cookie cutter to stamp out shapes or cut into small squares.
