Roasted Swede with Thyme and Hazelnuts

Enjoy this roasted swede dish with honey, thyme and hazelnuts as an accompaniment to any roasted meat dish.

Cook time: 40 minutes

Servings: 4 people


Preheat the oven to Gas Mark 7, 220°C, fan 200°C.

Arrange the swede cubes on a large baking tray, toss with the olive oil and season.

Add the garlic and thyme and toss again. Roast for 30 minutes.

Remove from the oven and toss with the honey and nuts.

Return to the oven for another 8-10 minutes, until golden.


1 large swede, cut into 4-5cm pieces 
30ml olive oil
3 garlic cloves, whole and unpeeled
1 tbsp thyme, chopped
2 tbsp honey
3 tbsp blanched hazelnuts, roughly chopped
