Roasted Carrots with Fennel Seeds

Give roasted carrots a makeover when you mix in some parsley and fennel seeds.

Prep time: 5 minutes

Cook time: 30 minutes

Servings: 6 people


Preheat the oven to gas 5, 190°C, fan 170°C.

In a bowl, toss the carrots with the oil, fennel seeds and season. 

Tip onto a baking tray and roast for 30 minutes.

Scatter over the parsley, to serve. 


500g carrots, quartered
2 tbsp olive oil
2 tsp fennel seeds, crushed
2 tbsp chopped flat-leaf parsley
