Roast Potatoes with Lemon and Bay Leaf

Put a tasty twist on classic roast potatoes with lemon and bay leaves. This side goes perfect with fish.

Cook time: 35 minutes

Servings: 6 people


Preheat the oven to gas 6, 200°C, fan 180°C.

In a large bowl, toss the potatoes with the lemon, bay leaves olive oil and some seasoning.

Spread the potatoes out on a baking sheet in a single layer.

Roast for 30-35 minutes, turning the potatoes halfway through cooking, until tender, golden and crisp at the edges.


750g waxy potatoes, such as Charlotte, sliced lengthways
1/2 lemon, finely sliced
3 fresh or dried bay leaves
3 tbsp olive oil
