Quick chickpea bean stew recipe

Prep time: 10 minutes

Cook time: 30 minutes

Servings: 4 people


  1. Add the olive oil to a large pot with the onion and garlic. Let it cook for about 5 minutes until soft.
  2. Chop the peppers into small pieces. Add them the pot with the paprika and oregano and toss well.
  3. Cook for another few minutes until the peppers have started to soften.
  4. If you want to make some quinoa to go with it, pop this on now too.
  5. Add the chickpeas, butter beans and tinned tomatoes to the pot and toss well.
  6. Season with sea salt and pepper and bring it up to a simmer.
  7. Let it simmer for about 25 minutes until the peppers are tender, then serve.
