Peach, Parma Ham and Mozzarella Bruschetta

These delicious light-bites are the perfect accompaniment for summer parties and you can use the leftover peaches to make Bellinis.

Prep time: 10 minutes

Servings: 4 people


Toasts the ciabatta halves on a hot griddle pan - or under the grill or on the barbeque - for 1-2 minutes. 

Toast each side until lightly charred. 

Rub each slice of the toast with the cut slices of the garlic clove. 

Brush with half the olive oil.

To serve, layer up each piece of toasted ciabatta with the sliced peaches, mozzarella, parma ham and seasoning. 

Drizzle over the remaining olive oil and balsamic vinegar and garnish with basil leaves. 


2 ciabatta rolls, halved

1 garlic clove, halved 

2 tbsp extra-virgin olive oil 

2-3 peaches pitted and quartered

6 slices of parma ham, torn 

1 x 25g mozzarella ball, drained and sliced

1 tbsp balsamic vinegar

small handful of basil leaves
