One-pan lamb rogan josh

This easy homemade rogan josh recipe is cooked with authentic Indian spices and pieces of slow-cooked tender pieces of lamb.

Servings: 6 people


Heat 1 tbsp oil in a heavy based saucepan or casserole dish.

Fry the lamb for about 10 minutes, until golden brown, cooking in batches to avoid overcrowding the pan if you need to.

Set aside.

Add the remaining oil to the pan, followed by the onions.

Cook for 3 – 5 minutes until soft, then stir in the garlic, ginger, cardamom, cloves and cinnamon and cook for 1 minute more.

Add the cumin, coriander, paprika and tomato purée and return the lamb to the pan.

Cook for 3 minutes, stirring often to ensure the lamb is well coated. Stir in the yogurt, 1 tbsp at a time, pour over 125ml water and bring to a boil.

Reduce the heat to low and simmer gently for 1 hour, topping up with water if needed or until the lamb is tender.

6 cardamom pods
4 cloves
2·5cm piece cinnamon bark
2 tsp ground cumin
2 tsp ground coriander
2 tsp paprika
1 tsp chilli powder
3 tbsp tomato purée
150g natural yogurt
