Leftover Ham and Pineapple Burger

Through FoodCloud, Tesco donates surplus food to charities within their communities, food that is perfectly fit for human consumption but cannot be sold for a variety of reasons (e.g. fresh produce that will not be sold the next day, short-dated product, slightly damaged packaging or mistakes in ordering).  

In celebration of our partnership with FoodCloud, we're bringing you this handy recipe to use up leftovers. Ham, gammon or pork belly tastes great when combined with the sweet flavour of pineapple in a bap or a sesame seed bun.

Prep time: 15 minutes

Cook time: 30 minutes

Servings: 8 people

Preparation

Heat a griddle pan on the hob over a high heat. When it is hot, toast the cut sides of the burger buns until golden. Remove to warmed plates while you prepare the gammon and pineapple.

Brush the gammon all over with the oil and griddle for 2-3 minutes on each side until heated right through. Place a slice on the base of each burger bun.

Add the pineapple to the pan and cook for 1-2 minutes on each side. Place on top of the gammon with a couple of lettuce leaves and a squirt of ketchup or mayo.

Sandwich with the top of the bun and eat straight away.

2 burger buns, halved
2 x 150g thick slices leftover roast gammon
1tbsp olive oil
2 canned pineapple rings in juice, drained
Leaves of little gem lettuce 
Tomato ketchup
Mayonnaise
