Irish Baking Adventures: Biscoff and Pear Muffin Loaf

This sweet loaf works as a dessert with some ice cream on the side or simply the perfect accompaniment to a cup of tea or coffee.

Cook time: 50 minutes

Servings: 10 people


Preheat oven to 200C/180fan Gas Mark 6

Line a standard loaf tin with a paper liner.

Mix together all the dry ingredients.

Beat milk, eggs, oil, vanilla, milk together.

Add to dry ingredients, and using a wooden spoon give a gentle mix, a lumpy batter is good (no electric mixer required) DON’T OVER MIX, as this will make the loaf tough.

Chop the pear into small pieces and toss in some flour, (this will help keep the pear from sinking in your batter).

Fold into the batter give a gentle stir to mix in.

Empty half the batter into the tin.

Using a teaspoon, drop 5-6 spoonfuls of spread along the middle of the batter. Pour in the remainder of the batter. Top with some more Biscoff Biscuit Spread. 

Bake for 40-50 mins or until cooked through. Cover with foil if browning too much on top.

Leave to cool, then melt ½ the Tesco White Chocolate Chips and drizzle over the loaf.  Top with some Tesco Cake sprinkles.


250g plain flour
100g sugar
1/2tsp salt
1tbsp baking powder
250ml milk
1tsp vanilla
60ml veg oil
2 large eggs
1 jar Biscoff Biscuit spread
1 tin Tesco pears chopped small
1pkt Tesco white chocolate chips (100g)
