Easy nachos

Perfect for sharing, these easy nachos are served with a speedy homemade salsa, refried beans and gooey melted cheese. They're ideal for serving at a party or for a night in with friends. 

Prep time: 10 minutes

Cook time: 25 minutes

Servings: 4 people

Preparation

1. Preheat the oven to gas 6, 200°C, fan 180°C. Grease and line a baking tray with nonstick baking paper. 

2. Empty the refried beans into a saucepan. Heat gently for 4-5 minutes, stirring occasionally. Do not allow to boil.

3. In a bowl, combine the tomatoes, avocado and lime juice for the salsa. Season well and set aside, until needed.

4. Spread the tortilla chips out on the prepared tray and scatter over half the cheese. Top with the refried beans, and then scatter over the remaining cheese. Bake for 10 minutes, or until cheese has melted.

5. Serve the hot nachos immediately with the salsa, soured cream, jalapenos and coriander sprigs.
