Black pudding hash

Preparation

1. Using a large box grater, grate the black pudding and cooked potatoes into a bowl, season with salt and mix

2. Place in a ring cutter and shape with your hand, add to a hot pan and fry for 2mins on both sides, place in a preheated oven at 200c for 5mins

3. Cook the 4 eggs in a pan until soft, season with espelette pepper and salt

4. To serve, place the pudding hash on the plate, top with the jalapeno relish, and finish with the fried egg
