BBQ baked potatoes recipe

Set up a baked potato bar at your next barbecue with this easy baked potato recipe and let everybody help themselves. Simply skewer your potatoes (this makes them easy to control on the barbecue if you're making lots, and also helps them cook faster), barbecue until crisp and mix up a few different bowls of toppings for everybody to build their own ideal dish.

Preparation

  1. Heat your barbecue to high. Wash and scrub the potatoes, then pat completely dry.

  2. Thread 6 potatoes onto 2 long metal skewers, brush with the olive oil and season with salt.

  3. Add the skewers to the barbecue, placing towards the edge so that they are over indirect heat. Cover with the barbecue lid. Cook for 30-40 mins, turning halfway through, until crispy and dark golden brown. Slice open and load up with the toppings of your choice.
