Banana Buttermilk Pancakes

Pancakes have always been a favourite breakfast option, but why not add an extra hint of sweetness and add some banana and maple syrup?

Cook time: 15 minutes

Servings: 4 people

Preparation

Sift the flour and baking powder into a bowl and stir in the sugar. 

Whisk together the buttermilk, orange juice and eggs. 

Pour the buttermilk mixture into the flour and whisk until smooth. 

Stir in the diced banana. 

Heat the butter and olive oil together in a frying pan and add 1 ½ tablespoons of the batter for each pancake.

Cook for 3-4 minutes, until golden and then carefully turn over and cook for a further 1-2 minutes. 

Serve drizzled with a little maple syrup and a dollop of natural yogurt.

150g plain flour
1/2 tsp baking powder
10g caster sugar
125ml buttermilk (Use Tesco brand buttermillk - only 79c for 1l)
juice of 1 orange
3 eggs
2 medium bananas, peeled and diced
30g unsalted butter
1tbsp olive oil
maple syrup to serve
natural yogurt to serve
