Leftover Spicy Pork and Veg Gumbo Recipe

Another great recipe to help you use up leftover pork and make the most of the season’s fresh produce. Add green beans to make a delicious midweek meal.

Prep time: 10 minutes

Cook time: 30 minutes

Servings: 2 people

Preparation

  1. Heat the oil and butter in a large pan and fry the onion, pepper and celery until it starts to soften.
  2. Add the cayenne, paprika and flour and mix with the vegetables until they are coated evenly. Cook for 2‑3 minutes. 
  3. Gradually add the stock, stirring constantly to avoid any lumps.
  4. When all the liquid has been absored, add the tomatoes and green beans.
  5. Simmer for 20 minutes, adding the pre-washed rice halfway through.
  6. When the rice is nearly cooked, add the peas and pork and cook for further 5 minutes.
  7. Serve immediately.

  3. 1 green peppers, deseeded and chopped
  4. 1 stick celery, chopped
  5. 20g plain flour
  6. 2tsp cayenne pepper

  9. 400g tin tomato
  10. 50g green beans, chopped into 1 cm pieces
  11. 100g rice, washed and drained
  12. 75g fresh peas
  13. 150g leftover diced pork
