Greek Salad Kebabs with Red Pepper Dip Recipe

Chicken skewers

This summer, try this super Greek-inspired meal for two and make the most of the summer evenings. 

Prep time: 10 minutes

Cook time: 5 minutes

Servings: 2 people

Preparation

  1. To make the red pepper dip, blitz the peppers, 50g of feta, lemon juice, olive oil and garlic in a food processor, until smooth.
  2. Tip into a serving bowl, garnish with the remaining feta and the oregano and put in the fridge, loosely covered, until needed.
  3. Mix the olive oil, lemon juice, crushed garlic and oregano in a small jug.
  4. Skewer a mix of the chicken, red onion, cucumber, olives, feta and tomatoes onto 6-8 skewers (depending on their size).
  5. Place the skewers on a platter, drizzle with the dressing.
  6. Serve with wholemeal pittas and the red pepper dip.

  • 2 wholemeal pittas, to serve 
  • 80g roasted red peppers  
  • small squeeze lemon juice
