Blackberry and Cream Summer Tarts Recipe

Easy to make and delicous, these mini berry and cream tartlets are the perfect finger food or dessert for an evening dinner party.

Prep time: 15 minutes

Cook time: 15 minutes

Servings: 6 people

Preparation

  1. Preheat oven to Gas 6, 200°C, fan 180°C.
  2. Cut pastry into squares, approximately 10cm in size. 
  3. Brush 4 squares at a time with melted butter and lay one on top of another at an angle to make a star shape.
  4. Press into a muffin case.
  5. Repeat process with the remaining pastry squares.
  6. Bake for 12-15 minutes until golden.
  7. Meanwhile, mix together the custard and whipped cream and spoon into the cooled tart cases. 
  8. Top with the blackberries or berry mix and sprinkle with icing sugar. 
  9. Serve with a sprig of mint.
