Mummycooks' Prawn & Spinach Orzo Pasta

"My kids love this dish and it’s so quick and easy to prepare so be sure to make extra for a school lunch box. This recipe can be served warm or cold." 

Prep time: 5 minutes

Cook time: 20 minutes

Servings: 4 people

Preparation

Melt the butter and olive oil over a medium heat in your pot.

Add onions and stir continuously cooking until soft for about 3-4 minutes.

Add garlic and orzo stirring constantly for 1-2 minutes.

Pour in vegetable stock and add salt and pepper to taste.

Cook uncovered on a low heat, stirring often, for about 20 minutes or until the pasta has cooked through.

Add some boiled water if it needs longer to cook.

Add the spinach and prawns and cook for an additional 2 minutes until the spinach is soft and dark. Add the parmesan and mix.

250g prawns

¾-1 cup grated parmesan
