Mummycooks' Pasta with Tomato Sauce

"This tomato sauce is perfect to pre-cook and freeze making it easy to whip a nutritious school lunch in the morning. Just heat it up, stir it through some pasta and serve in a food flask so your kids can enjoy a home-made warm lunch."

Prep time: 5 minutes

Cook time: 40 minutes

Servings: 4 people

Preparation

In a large pan add the olive oil and garlic and cook gently for 3-4 minutes.
Stir in the tomato puree and cook for a further 2 minutes before adding the chopped tomatoes.
Bring the mixture to the boil, reduce the heat and simmer for 30 minutes – until the sauce has thickened.
Stir in the basil and simmer for a further 3-4 minutes.

4 cloves of garlic, minced 

4 tbsp olive oil 

2 tbsp tomato puree 

Handful of fresh basil, roughly chopped
