Chicken, Potato and Bacon Casserole

Take advantage of your slow-cooker and serve up a delicious family meal without the fuss. Leave it to cook while you go about your busy day.

Preparation

Heat the oil in a saucepan and once hot, add the chicken thighs.

Brown the surface of the chicken thighs until golden. This shouldn’t take longer than 10 minutes.

Remember that you’re just searing the meat, the slow-cooker will do the real cooking.

Remove the chicken onto a plate and now add the bacon and shallots to the pan until brown.

Add the chicken, bacon, shallots, potatoes, thyme and white wine to the slow-cooker.

Mix a chicken stock cube into 500ml of hot water. Once dissolved, add the mixture to the slow-cooker.

Give everything a quick stir and then leave to simmer on high for 4-6 hrs, until the chicken is tender.

Sprinkle in the lemon juice and remaining tarragon and season to your liking.

12 rashers smoked streaky bacon, chopped
200g shallots
350g baby new potatoes
A few sprigs of thyme
200ml white wine
500ml hot chicken stock
Squeeze of lemon juice
2 tbsp tarragon, chopped
