Caramelised Onion Potato Pancake

Tesco is delighted to announce that Irish onions will be back in season and back on shelves from September for everyone to enjoy. Here's an easy recipe from Country Crest to put them to use.

Prep time: 30 minutes

Cook time: 55 minutes

Servings: 4 people

Preparation

Cook the potatoes, then mash with the cream cheese, milk, chives and egg.

Season with salt and pepper.

Heat half of the oil in a frying pan over a medium heat and add the onion slices.

Season with salt and pepper and cook for 20 minutes until caramelised.

Add the vinegar and cook for another five minutes until it has almost evaporated, then stir in the thyme.

Stir the onions into the potato mixture and leave to cool.

Shape into round discs and refrigerate for one hour until firm.

Heat the remaining oil in the frying pan over a medium-high heat.

When hot, cook the potato cakes for 3-4 minutes per side until crispy on the outside and warmed throughout.
