Caitriona Redmond's Pitta Pockets

“You gotta pitta pocket or two! Cheesey singing is not obligatory in my household but I do love how versatile pitta bread is for lunchboxes.”

Cook time: 3 minutes

Servings: 4 people

Preparation

Prepare the pitta breads as instructed on the packet, making sure that each pocket opens easily by cutting the pitta in half and allowing to cool while you prepare the filling.

Drain the tin of tuna and put the contents into a large mixing bowl. Chop the tomatoes, cucumber, apple, and pepper into bitesize chunks and add to the mixing bowl. Finely chop the fresh coriander and also add this to the bowl.

Stir well, then add the mayonnaise and stir once again until all the ingredients are coated. Spoon into the pitta pockets and serve.

Note: If you’re worried about soggy lunchboxes, line the pitta pockets with fresh salad leaves before filling with the tuna mixture.
