Blueberry and Banana Muffins

"These muffins are great to have on stand by for a nutritious filling snack. They freeze really well so make sure to double up on your recipe and store for future use."

Cook time: 25 minutes

Servings: 12 people

Preparation

1. Preheat the oven to 200c. Grease a muffin tray or line with paper cases.
2. Combine the flour, rolled oats, baking powder, cinnamon, salt and sugar.
3. Next combine the wet ingredients by mixing the sunflower oil, eggs and milk in a separate bowl. Make a well in the dry ingredients and combine with the wet ingredients.
4. Fold in your mashed banana and blueberries until everything is mixed evenly.
5. Divide the mixture into the muffin tray and place in an oven for 20-25 minutes until done.

Serving suggestions: Serve with some natural yoghurt.

75g wholemeal flour

200g rolled oats

50g brown sugar

250ml milk

2 large eggs

3 tablespoons of sunflower oil

3 teaspoons of baking powder

1 teaspoon of cinnamon

1 teaspoon of salt (optional)
