Mexican Taco Pizzas

Kids will love this simple dish, which is made using readymade pizza bases, topped with beef, tomato sauce and gooey mozzarella. 

Prep time: 5 minutes

Cook time: 30 minutes

Servings: 4 people

Preparation

Preheat the oven to gas 7, 220°C, fan 200°C.

Heat a saucepan over a medium-high heat with the olive oil and add the mincemeat.

Cook for 3-4 minutes, stirring occasionally until golden brown.

Sprinkle the seasoning mix over the meat, add in the pasta sauce and add 75ml water.

Stir well, reduce the heat and simmer for 10 minutes, until the meat is cooked and the sauce has reduced.

Place 2 baking trays in the oven for 2-3 minutes to heat up.

Remove and carefully place the pizza bases onto the trays.

Divide the pasta sauce between the pizza bases, top with the mince, the cherry tomatoes and finally sprinkle over the cheese.

Place the pizzas in the oven for 8-10 minutes, or until the cheese is bubbling and starting to go golden.

Remove and allow to stand for 2-3 minutes, before cutting into slices and serving.

Tip: You can double up the mincemeat recipe. Any leftovers can be left to cool, then covered and kept in the fridge for 2-3 days. The beef makes a tasty filling for jacket potatoes.
