Your meat is tempered, your pan is hot and your seasoning is ready. It’s time to cook your steak to perfection.
For this steak cooking method, we’re going to sear the meat on the pan before transferring it to a preheated oven.
With your pan at ‘close to smoking’ point, add a knob of butter to the pan.
Once the butter has melted and is bubbling, add your steaks to the pan.
Leave each steak to cook for two minutes on each side.
The steak should be a nice colour at this point, browning on both sides.
Crush two cloves of garlic on the chopping board and add them to the pan.
Add another knob of butter and some fresh thyme and a few pieces of thinly chopped pieces of chorizo.
Now transfer the meat from the pan to the oven (preheated to 220 degrees Celsius).
Oven Cooking Time for Steaks
4-5 minutes for rare
5-7 minutes for medium rare
8-9 mins for medium
12 mins for well done
