7 surprising ways to use up leftover carrots

Household food waste is a big problem in Ireland, so it's important to look for ways to reduce the amount of food we throw away. Learn how carrots are more than just a crunchy snack or a nutritious side dish. Here are some of the extraordinary ways you can apply this versatile vegetable in your home.

Amazing uses for carrots

1. Try a homemade face mask

Create a cleansing and revitalising homemade face mask using soft steamed carrots. Once cooled, whizz them up in a food processor with banana, lemon juice, honey and olive oil and apply to your face for a DIY beauty boost.

2. Make vegetable stamps

Do you remember making potato craft stamps when you were in school? Well, you may not know that carrots are an easy alternative to potato printing. Help your kids to carve some old carrots into a variety of shapes, then use the stamps to print patterned designs on paper, cards or wrapping paper.

3. Grow a carrot plant

Here's an easy way to start off your children's private garden. Chop off the leafy end of the carrot, leaving an inch of the orange top. Place this in a saucer of water in a sunny spot and watch the green shoots grow and small cream-coloured roots form.

Pot it when the roots look sturdy, and soon the plant will produce beautiful spiky foliage with lacy white flowers.

4. Cook carrot spaghetti

Use a spiralizer or peeler to turn a plain carrot into super healthy vegetable pasta. Create long, thin strips of carrot using your tool of choice, then gently fry or blanch the ‘spaghetti’ and serve with pasta sauce.

5. Bake vegetable crisps

Healthy vegetable crisps are easy to make. Finely slice a few carrots alongside other root vegetables like sweet potatoes, beetroots and parsnips. 6. Create a calming aftersun spray

Juice a couple of carrots and mix with two parts of rosewater. Pour the mixture into a spray bottle and you’ve got a calming spray to instantly soothe itchy or uncomfortable skin after a day in the sun.

7. Energising carrot and orange juice

Get two of your five-a-day in one go with this energising drink. Simply juice two apples, two carrots and a small piece of ginger and then mix with orange juice.
